Kiritsuke

Tetsujin Kiritsuke with 200 mm edge length and ukiba finish.
This exceptional gyuto from Tetsujin Hamono showcases expert craftsmanship by blacksmith Toru Tamura and sharpener Naohito Myojin. Crafted in the Kocho prefecture of Japan, it follows the classic Sakai tradition, offering ultra-refined forging and impeccable balance.
The blade features a Ukiba finish—a semi-glossy hairline polish with a bead blast transition between the stainless cladding and core steel. This creates a striking bright finish with a silky matte contrast above the core steel.
With a thin edge and subtle flex, the knife glides smoothly and effortlessly through ingredients. It offers a comfortable grip and a controlled cutting feel, making it an excellent choice for precision work.
